When friends come to visit, the way I prefer to serve my smoked mussels on a standard baking tray or pan, mix up the following "Provencale", drizzle ¼ tbs. of the mixture over each mussel, and place under the broiler for 30 seconds. Your guest will think you did everything!
Provencale
To make the "Provencale" paste, simply mix olive oil, pesto, chopped parsley, garlic, shallots and a little Panko or breading into a paste. No salt needed!
If you’re really short on time, simply mix your favorite pre-seasoned pesto and Italian bread crumbs. That works too!
